Tribal Tastes manufactures and wholesales traditional African food in a contemporary form. Specialising in West African inspired Easy Meals Solutions such as Jollof Rice, essential ingredients such as pure palm fruit oil and smoked fish and South African Specialties such as mealie meal, samp, boerewors, droewors and biltong.  Products contain 100% natural ingredients and are: preservative free, gluten free, dairy free, low GI & sugar free.
Director Kunle Adesua grew up on the land in Nigeria before studying in Europe and finally making a home in Australia. He is a West African cusine specialist and features in the African episode of Food Safari aired on SBS 14th January 2009. Kunle's Jollof Rice recipe has also been published in the new Food Safari Cook Book. This is a great photo of Kunle's fabulous dish.

Kunle is native to Akure, Ondo State of Nigeria and from the Yoruba cultural group. Jollof Rice has NO rules. Jollof is nothing like risotto. Jollof rice & risotto are like day and night. Rice used in Jollof Rice is Parboiled variety (not partially boilled as one comment suggested). Surfing Cook's comment on the food safari website failed to mention that in Yoruba land garlic is NOT used in cooking; it's used in medicine. Palm Fruit Oil IS an essential ingredient to Yoruba cooking which gives this dish it's amazing ruby red colour. Jollof Rice is an every day food that you can cook with whatever you can afford. At party times Jollof Rice can be very rich. Cuts such as liver, kidney and stock from the other parts are used. Access to fish in Nigeria where foreign fishing companies control the waters and local fisherman sell thier prime fish to Europe & America, makes fish an unaffordable option.
